Total Woman Pinwheel Cheese Meatloaf

Backstory
This is the first dish that @mtnhousewife made for her husband. Obviously, it was a hit as they have been married for quite some time
Ingredients
1 1/2 lb. lean ground beef
3/4 cup cracker crumbs
1/2 cup finely chopped onion
1 egg
1 tsp. Salt
1 tsp prepared horseradish (optional)
1/2 tsp orgeano
1/8 tsp pepper
1 tsp Worcestershire sauce
1 8 oz can tomato sauce
1 1/2 c. shredded cheddar cheese
1/2 c. shredded Cheddar cheese (for topping)
Directions
- Combine beef, cracker crumbs, onion, egg, salt, horseradish, oregano, pepper, andWorcestershire sauce and 1/2 can of tomato sauce. Mix well and on waxed aper or foil shape into flat rectangle about 14 inches by 10 inches.
- Sprinkle cheese evenly over meat mixture up to 1 in. of edges. Roll up from shorter side like jelly roll, and press ends to seal.
- Remove from paper or foil. Transfer to shallow baking dish, seamside down. Bake at 350 degrees for 45 minutes.
- Drain off excess fat. Pour remaining tomato sauce over roll and bake 15 minutes more. Sprinkle top with 1/2 cup shredded cheese. Let stand a few minutes to melt.
This is good served with rice or mashed potatoes.
