Simple, Quick Cornflake Chicken

Strange isn’t it, how a recipe can call so many memories to mind? It doesn’t matter how simple or complicated. Cornflake chicken is something I always helped my mom make. The special memory here is that she made it for me when I won the 5th grade district spelling bee. She helped me work tirelessly on memorizing the spelling of words. It paid off!! She asked if there was anything that she could make the winner for dinner. You know what I asked for? Cornflake chicken. MMMMMM!

How its Done

It’s simple really, first you take thawed chicken breast and coat it in mayonnaise and your desired seasonings. Mom always let me help with the next part–the crushing of Kellogg’s Cornflakes. (Yes, they sell cornflakes crumbs in a box, but mom always had a box of cornflakes on hand for baking, cooking, etc.) Besides, its quite satisfying to crush them inside of a little bag. Get some anger out ladies!!! CRUSH IT! Also, the cornflakes being hand crushed gives a bit more texture than the cornflakes crumbs.

Coat the chicken in cornflakes. Place on a piece of parchment paper and place in the oven at 425 for about 15 minutes or until the internal temperature of the chicken is 165.

Serve with a vegetable and a starch. The kids love it with mac and cheese on the side. Peas are a go to veggie in this house because I don’t have to listen to any complaining about it.

Equipment

  • parchment paper
  • baking sheet

Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 cups crushed cornflakes (or cornflake crumbs)
  • 1 cup mayonnaise

Instructions
 

  • Preheat oven to 425°.
  • Coat thawed chicken with mayonnaise using a basting brush.
  • Season as desired. (Salt and pepper do just fine, but you can get creative.).
  • Coat in crushed cornflakes on both sides of the chicken.
  • Place on parchement paper lined baking sheet.
  • Bake in oven for 15 minutes or until the internal temperature reaches 165°.
