Reuben “Nachos”

Left over corned beef? Last night, I had the late night munchies. I didn’t want more corned beef and cabbage (our St. Patrick’s Day Dinner). So, I stood there and mused for a while. This is what I came up with. (This dish was an impulsive one, so I didn’t even consider the idea that I would write about it, let alone decide to photograph it. My husband said it was so delicious that he insisted that I write about it. So, if you would like to make this dish “pretty”, use a squeeze bottle to zig zag some thousand island on top!

First, cook your fries. Air frying is a great way to do that. Use the broiler to melt Swiss cheese on top of your fries. I didn’t have Swiss cheese, so I sprinkled shredded Parmesan, this was still a good option. In a bowl, mix your corned beef and some sauerkraut. Next top with chunks or shredded corned beef and sauerkraut mix. (If you need a good corned beef and cabbage recipe, check here.) Finally add the thousand island dressing. Reuben Nachos

This is a fun take on mixing the idea of Nachos and Reuben sandwiches together…..
Course Snack

Ingredients
  

  • 1/2 bag french fries
  • 3 slices swiss cheese
  • 1/4 cup sauerkraut
  • 6 tbsp thousand island
  • 1 cup shredded or chunked corned beef

Instructions
 

  • Cook the french fries according to the instructions
  • Use the oven broiler to melt 3 slices of swiss cheese on top of the fries
  • In a bowl, mix corned beef and sauerkraut
  • Top with thousand island and serve!
