Cucumber Salad

Those of us with children know that every once in a while, we go shopping and come home with things we don’t recall buying, wondering what happened. Then we realize our child(ren) added items to the cart. Well, the other day I came home with a random cucumber. I wanted a new creative cucumber dish. After all, I had to use it.

The other night as I was getting the tri-tip together for dinner, I decided I wanted a different take on salad, noting that I hadn’t very much lettuce left.C



I thinly sliced cucumbers, chopped about 10 cherry tomatoes in half (since that is what I had left), added some red onion and dill. To that, I added my homemade red wine vinegar. (2 Tbsp red wine to 4 tbsp white vinegar.) Add salt and pepper.

Oh, store bought red wine vinegar is okay too. I just didn’t have any at the time.

From there, I let it soak for about 20 minutes, tossing occasionally. Keep refrigerated. The longer it marinates, the yummier it is.

Cucumber salad


1 thinly sliced cucumber

10 cherry tomatoes, halved or one hothouse cut in wedges, or 2 roma tomatoes cut in wedges (whatever you have works for this)

1/2 red onion sliced into strips

1 heaping tsp dried dill

2 Tbsp red wine

1 tbsp white vinegar

Mix all ingredients together. Refrigerate for at least an hour before serving. Serve chilled. This is even a good make ahead dish.
