This dish makes me want a little bit of summer in my life. This crab macaroni salad goes great on any dinner table. But it is also a fun take on a classic dish served at barbeques all over America:macaroni salad.
If you are on a budget, I suggest canned crab, but should you choose to dial it up, you can add fresh crab instead. Imitation crab is alright, but I think real is best for this.
You can add peas to this (especially if you are trying to get your children to eat veggies!)
If you like a bit of spice here, add 1/2 tsp Cayenne. That ought to liven it up for you!
Crab Macaroni Salad
1 lb macaroni noodles
Lg Red onion, finely chopped
2 cans chunk crab meat (or 2 cups of fresh crab if you are feeling fancy)
1 can peas (IF you want to add a vegetable)
2 tsp lemon juice
Salt and pepper to taste.
1 tsp paprika
1/2 tsp garlic powder
1 c mayonnaise
2 green onions, diced
2 tbsp butter
Sautee the crab in the butter and lemon juice with the seasonings until lightly browned.
Cook noodles according to package. Rinse noodles under cold water. Add all ingredients to the noodles. Stir and refrigerate. Serve cold.
