Courtney’s Pampered Chef Quick Cooker Chicken Chili

So many days get so hectic. Suddenly, you look at the clock, its 3 PM and you have no idea what you are doing for dinner! This happens to me…so often. I am amazing at losing track of time. There is just so much we must accomplish in one day and the time zooms by!

A few reasons I love the Pampered Chef Quick Cooker over the competition

Courtney’s Quick Cooker Chicken Chili

  • 1 Pampered Chef Quick Cooker or other pressure cooker


  • 2 tbsp olive oil
  • 2 pounds ground chicken
  • 1 1/2 cup onion, diced
  • 1 green bell pepper, finely diced
  • 3 cloves garlic, minced
  • 15 oz kidney beans, canned
  • 15 oz pinto beans, canned
  • 15 oz tomato sauce, can
  • 2 tbsp unsweetened cocoa powder
  • 2 tsp cumin, ground
  • 2 tsp paprika, smoked
  • 2 tsp coriander, ground
  • 1 tsp dried oregano
  • 1/4 tsp chili powder
  • 1/2 tsp salt
  • 2 cups low sodium chicken broth
  • sour cream for topping
  • shredded cheddar for topping
  • sliced scallions for topping


  • Cook chicken until browned. Set aside
  • Drain and rinse beans while chicken is cooking.
  • In quick cooker, put in saute mode and add diced onion and bell pepper. Cook until translucent
  • Add garlic, saute for one minute.
  • Add beans, chicken, broth, tomato sauce, cocoa powder, cumin, smoked paprika, coriander, oregano, chili powder, salt.
  • Cook on the pressurized soup stew mode. On the Pampered Chef Quick Cooker, this is 40 minutes.
  • Release pressure once timer is up. Serve with sour cream, cheese, and scallions.
