Campfire potatoes

This Campfire Potatoes recipe is very versatile and from none other than my husband! You can make it a dinner dish or a breakfast dish.  The amazing thing is, this dish is made of ingredients people usually have on hand. Psst….and it’s good for around the campfire.


6 Russet Potatoes (large)

2 c. Cheese

1/2 C. Canned jalapenos

1 white onion, chopped

6 slices of bacon

Slice potatoes into circles. Steam them or cook them in oil. (Depends on how healthy you are trying to be.) Add onions, jalepenos, 1 and 1/2 cups of cheese (or more if you want.), and bacon. Top with additional 1/2 c of cheese. Bake at 400 for 15-20 minutes.


  • Add 4 eggs to make a scramble for breakfast
  • Use pork sausage in addition or instead of bacon (1 lb will do)
  • Add sausage gravy to top
  • Skip the jalapenos if it is too spicy
  • Top with French’s onions
