Air Fried Potato Salad

Potato salad is a staple of potlucks, picnics, and summer all over the United States! Let me know in the comments below what your favorite picnic dish is!!!!!! As you know, I like to keep these recipes short and sweet without a life story.

You are going to need an air fryer and pressure cooker for this! Here are my recommendations:

Fried Potato Salad

Fried potato salad is a fun new take on potato salad!
Prep Time 15 minutes
Cook Time 30 minutes

Equipment

  • 1 Pampered Chef Quick cooker, pressure cooker, or instant pot
  • 1 air fryer
  • 1 large bowl

Ingredients
  

  • 6 potatoes
  • 1 cup water
  • 2 tbsp oil
  • 1/2 tsp ground mustard
  • 1/2 tsp salt
  • 1/4 tsp celery seed
  • black pepper
  • 1 tsp garlic powder
  • 1 cup mayonnaise
  • 1 tbsp mustard
  • 1 Tbsp ranch seasoning
  • 3 hard boiled eggs
  • green onion for garnish

Instructions
 

  • Cut potatoes into cubes
  • Place in Pampered chef quick cooker or pressure cooker with one cup of water
  • Set the pressure cooker to steam for 15 minutes
  • Add potatoes to an ice salt water bath for one hour (to remove starch)
  • Drain
  • Add oil, mustard, salt, celery seed, black pepper, garlic powder
  • Give it a good stir
  • In large bowl, begin to prepare the sauce-add mayo, mustard, ranch seasoning, hard boiled eggs
  • Air fry the potatoes for 30 minutes, flipping or stirring after 15
  • Add crispy potatoes to the sauce
  • Mix.
  • Add green onion for garnish and serve immediately

Notes

For extra crunch, you can add celery and onion.
