Meatloaf is always a wonderful comfort food. @mtnhousewife has a great recipe that is sure to find its way to your favorite recipes!

Backstory

This is the first dish that @mtnhousewife made for her husband. Obviously, it was a hit as they have been married for quite some time

Ingredients

1 1/2 lb. lean ground beef
3/4 cup cracker crumbs
1/2 cup finely chopped onion
1 egg
1 tsp. Salt
1 tsp prepared horseradish (optional)
1/2 tsp orgeano
1/8 tsp pepper
1 tsp Worcestershire sauce
1 8 oz can tomato sauce
1 1/2 c. shredded cheddar cheese
1/2 c. shredded Cheddar cheese (for topping)

Directions

  1. Combine beef, cracker crumbs, onion, egg, salt, horseradish, oregano, pepper, andWorcestershire sauce and 1/2 can of tomato sauce.  Mix well and on waxed aper or foil shape into flat rectangle about 14 inches by 10 inches.
  2. Sprinkle cheese evenly over meat mixture up to 1 in. of edges.  Roll up from shorter side like jelly roll, and press ends to seal.
  3. Remove from paper or foil.  Transfer to shallow baking dish, seamside down.  Bake at 350 degrees for 45 minutes.
  4. Drain off excess fat.  Pour remaining tomato sauce over roll and bake 15 minutes more. Sprinkle top with 1/2 cup shredded cheese. Let stand a few minutes to melt.
This is good served with rice or mashed potatoes.
